Surface milling a cut out slice of a tree

I would like to know how a person can set up Easel to surface mill a slice of a tree (or any other piece of wood) in order to make true flat on both sides?

I guess I’d put the dimensions in like this for this sample surface that is larger than the cookie or slab. Then choose a large diameter bit, adjust your stepover and depth of cut and clear out the shape in a roughing pass. You could also just write a gcode file to move in a Y direction and index X half the diameter of the cutter. A third way is to use a file on the internet for the purpose of surfacing a cnc workboard.

I have done this with a round piece of wood cut from a tree. The slice was cut as flat as possible before I ran a circular shape just larger than the diameter of the wood. I used a surfacing bit for the leveling process.
